Sweet and Spicy Watermelon Salad

Summer is almost over but there is still time to make this delicious spicy watermelon salad! This is perfect to bring to a BBQ and a great dish for Labor Day next week. Plus you can use any leftover watermelon to make these easy 3 ingredient margaritas!

The salad sweet and refreshing from cucumber and watermelon and tangy from the tomatoes and feta cheese. Plus the red onion and spicy vinaigrette add just enough of a kick.

Here’s what you need:

• Half a large watermelon

• Pack of cherry tomatoes or rainbow tomatoes

• 1/2 red onion or shallot

• 1 Cucumber

• 1 pack of feta cheese

• Lime juice from 1 lime

• 2 tbsp Honey

• 1-2 tbsp Calabrian Chile Paste (can use Chile paste or sriracha)

– 1/2 cup Red Wine Vinegar

– 1 tablespoon balsamic vinegar

How to make it:

1 Cut watermelon in half and then cut off the rind. Cube the watermelon and put in a large bowl.

2 Peel cucumber and cut into even chunks.

3 Cut the tomatoes in half and add to the watermelon and cucumber.

4 Add sliced onion or shallot and toss ingredients.

5 Let sit while you make the dressing.

6 Mix all dressing ingredients in a bowl and taste. You can add more or less spice, lime and honey to make it suit your taste.

7 Pour dressing over the fruit and toss evenly.

8 Sprinkle feta cheese on top and enjoy!

This is best served an hour or so after you make it but it will keep in the fridge for a couple days. Just drain excess juice as it’s in the fridge so it doesn’t get soggy!
