The Best Peanut Butter Cookies

If your a peanut butter lover these cookies are for you. Such a simple and quick recipe and so so tasty. They’re also gluten free!

I used to make these for my Nana almost every week. They were her absolute favorite and I actually haven’t made them since she’s been gone. I was going through my camera last week, looking over photos and saw that I took these the last time I made them for her and planned to post the recipe but never did.

So better late than never… here’s how to make Nana’s favorite cookies.

What you need:

⁃ 1 cup peanut butter

⁃ 1/2 cup brown sugar

⁃ 1/2 cup white granulated sugar

⁃ 1 egg

– 1 tablespoon vanilla powder (optional)

• you can use just white sugar but I like the richness brown sugar adds.

How to make them:

1. Combine the two types of sugar and add the egg. Mix thoroughly.

2. The mixture will be grainy and wet. Add peanut butter and mix. The dough will get really tacky but keep mixing until everything is combined.

3. Put the dough into the fridge or freezer for 20 minutes to harden.

4. Use a table spoon to scoop even amounts of dough and roll them into balls.

5. Space evenly on a baking sheet and bake for 10 minutes at 350.

6. Remove and let cool for 10 minutes then use a fork to press the cookies down and give them their signature lines.

7. The cookies will be gooey and chewy. Enjoy!
